Chef Adriaan’s favourite, fragrant Beef Biryani recipe

Meet our Executive Chef-aka-food-artiste, Adriaan Joubert, the talented creator behind the bold and eye-catching dishes you get to experience at Bushveld Terrace Restaurant.

He has kindly shared a special recipe dear to his heart and his family’s stomachs ~ you need to give this one a try!

From a young age Adriaan has always had a deep love for food and cooking, which is why it was no surprise that at 17-years-old, he decided to spend the rest of his life serving people with unique dishes, and a scoop of wow factor! After his two years of studies and training at City & Guilds International he qualified with six diplomas in food and hospitality.

Chef Adriaan is the winner of the 2016 Young Chef of Chaîne des Rôtisseurs Lowveld competition – which is a superb achievement!

After five years in the Bushveld Terrace kitchen, Chef Adriaan cannot do without his Santoku chef knife, plating tweezers and a simple spoon – which to him is the utensil that is most underrated!

We wrestled Chef Adriaan’s all-time favorite Beef Biryani from him to share with you – be sure to add this one to your recipe book!

Beef Biryani

Serves 15-20 people

Ingredients:

  • 6 potatoes 
  • 2 white onions 
  • 125ml sunflower oil
  • 2kg beef blocks (rump) 
  • 3 tomatoes
  • 500g soaked brown lentils 
  • 500ml buttermilk
  • 2l water
  • 100ml wet masala 
  • 5 minced garlic cloves 
  • 45ml minced ginger 
  • 10 sliced fresh chillies (optional)
  • 5 bay leaves 
  • 10 clove seeds 
  • 45ml cumin seeds 
  • 45ml coriander seeds (coarse ground) 
  • 750ml dry Basmati rice 
  • Salt & pepper to taste 

Method:

  1. Using a thin base casserole pot, heat up the oil.
  2. Add in all the spices and ginger and gently grill it just until the aroma of the spices become prominent.
  3. Add in the diced onion, chilli, diced potato, garlic and bay leaves.
  4. Brown the meat in the spices and onion mixture.
  5. Mix in diced tomatoes and lentils and let simmer until meat is cooked through.
  6. Add in hot water and let simmer for 10-12 minutes.
  7. Wash the rice with water, repeat this process until the water comes out clear.
  8. Add the rice to the water mixture (do not stir) and then add buttermilk on top.
  9. Cover the pot and cook for a further 20-25 minutes or until there is no more water.
  10. Mix meat mixture and rice gently together. 
  11. Serve with naan/poppadoms.
